Almond Cake with Ricotta and Pears

Ingredients for the Almond Cake with Ricotta and Pears:
- 4 eggs
- 1 1/4 cups almonds (Finely chopped)
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 cup potato starch
- 1/3 cup butter
- almond flavoring
- 3 cups pears
- 1/4 cup sugar
- 7 oz whipping cream
- 1 lb ricotta
- vanilla

Steps
For the preparation of the almond cake with ricotta and pears watch the video HERE.
In a bowl, we put the eggs, sugar, and beat with the whisks until we get a light and creamy mixture. We add finely chopped almonds, potato starch, a bit of almond flavoring, and baking powder.
We mix. Finally, we add the melted butter and mix. We put the obtained mixture, dividing it in half, into two 8-inch pans. We bake at 356°F for about 15 min.
Cream preparation:
In a saucepan, we put the pear pieces, sugar, and cook for about 10 min, stirring occasionally. We turn off the heat and let it cool.
In a bowl, we put the ricotta, cream, a bit of vanilla, and whip. We add the cooled pears and mix.
Assembly:
We take the first cooled base and place it on a plate. For a more precise result, we can use an adjustable ring for cakes and acetate sheet. We add the prepared cream, level it.
We place the second cold base on top. Lightly press and refrigerate for a few hours. Then decorate as you like!
