Ingredients
- 5.64 oz pasta
- 3.53 oz smoked salmon
- to taste arugula
- 1.76 oz cream cheese
- extra virgin olive oil
- salt
- pepper

Preparation
Wash and dry the arugula. Cut the salmon into strips.
Boil the pasta in salted boiling water, for the minutes indicated.
While the pasta is cooking, put the cream cheese in a pan (over low heat) and dilute it with 3-4 tablespoons of cooking water.
Once the cheese has melted, turn off the heat and add the salmon.
Once the time is up, drain the pasta and pour it into the pan. Mix well, adding a drizzle of olive oil and some ground black pepper.
Transfer everything to a bowl and add a couple of handfuls of arugula.
The salmon and arugula pasta is ready, you can serve it immediately, or let it rest in the fridge and serve it cold… enjoy!
Tips and Notes
You can use smoked salmon (cold or hot) or fresh salmon. If you use fresh, you will need to cut it into chunks and sear it for a few minutes in the pan.

If you want to serve it cold, you can store it in the refrigerator for one day, well sealed in a container. In this case, I recommend adding the arugula at the last moment, so it doesn’t soften too much.
