We can fill eggplant rolls as we like or with what we have in the fridge. I filled them with cooked ham and stracchino cheese. You can prepare them in advance and keep them in the refrigerator until serving time, a really delicious recipe.

  • 2 eggplants
  • 3.5 oz cooked ham
  • 3.5 oz stracchino cheese
  • extra virgin olive oil

  • Let’s start preparing the eggplant rolls, first wash and cut the eggplant into slices about half a cm (1/4 inch) thick.

    Arrange the eggplant slices on a baking sheet with parchment paper.
    Add a drizzle of extra virgin olive oil and bake the eggplants in a static oven at 392°F (200°C) for about 15-20 minutes, turning them occasionally.

  • Let them cool, then spread each eggplant slice with stracchino cheese, place a slice of cooked ham on each, and roll them up.

    Place the eggplant rolls in the oven on a serving plate and season them with extra virgin olive oil. Enjoy your meal!!
