Farmer’s Side Dish

Here I am proposing a dish that is a triumph of colors and flavors. It is a farmer’s side dish that includes bell peppers (red and yellow), potatoes, onions, and garlic. Ingredients for the Farmer’s Side Dish

When you read the recipe, you’ll realize that the quantities of the ingredients are entirely irrelevant. You can freely adjust them according to your personal taste.

  • 18 oz potatoes (net weight after peeling)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 1 clove garlic
  • A few leaves sage
  • 1 sprig rosemary
  • extra virgin olive oil
  • salt
  • black pepper

  • Potato peeler
  • 1 Baking dish oven-safe

Preparation of the Farmer’s Side Dish

  • Wash the potatoes, peel them and cut them into pieces. 

  • Brush oil on the bottom and sides of an oven-safe dish, place the potatoes in a single layer, dress them with a drizzle of oil and a generous pinch of salt, and bake in a preheated static oven at 360°F for 20 minutes. 

  • Meanwhile, wash the bell peppers, remove all the seeds and the white inner filaments, and cut them into strips not too small.

    Peel the onion and cut it into wedges. Also, peel the garlic, remove the central core, and chop it into pieces. 

  • After the 20 minutes of cooking, remove the potatoes from the oven and add the bell peppers, onion, and garlic to the baking dish. 

  • Sprinkle with finely chopped sage and rosemary, drizzle with a little oil, and season with salt and pepper to taste. Mix well to coat all the vegetables perfectly.

  • Then put the dish back in the oven for another 30 minutes, still at 360°F. Remove the farmer’s side dish from the oven and let it cool slightly before serving. Enjoy! Paola
