Fantasy Sandwich

After the eggplant sandwiches that were a huge success, here I am to offer you some new tasty sandwiches that I have called “fantasy sandwiches”. They are prepared with a delicate cream, lamb’s lettuce, and hard-boiled eggs. Perfect for a rustic dinner, a snack, and even for lunch at the office. And, of course, they are very easy to prepare and very appetizing. In short, you can’t always stuff a sandwich with ham and fontina, do you agree? Sometimes it takes little to make it really more appetizing.

Ingredients for 4 Fantasy Sandwiches

I used whole grain sandwich bread for these fantasy sandwiches, but you can replace it with other similar bread.

  • 8 slices Whole grain sandwich bread
  • 3.5 oz robiola
  • 1 sprig parsley
  • 0.7 oz walnut halves
  • 0.7 oz lamb's lettuce
  • 2 eggs

Tools

  • 1 Food processor
  • 1 Egg slicer
  • 1 Saucepan

Preparation of the Fantasy Sandwiches

  • Wash the parsley leaves and dry them well by patting them with kitchen paper. 

    Place them in a food processor with the robiola, walnuts, a couple of generous pinches of salt, a generous grind of black pepper and blend several times until you get a smooth cream.

  • Hard boil the eggs in a saucepan starting with cold water and counting nine minutes from boiling. Drain and let them cool down.

  • Spread the cheese cream on both slices of bread. 

  • Place the lamb’s lettuce leaves on one slice, then make a layer with thinly sliced eggs. To do this best and get smooth and precise rounds, I used an egg slicer. If you don’t have it and want to buy it, you can find it by clicking HERE.

    Finally, close the sandwich with the second slice of bread. 

  • Proceed in the same way to make the other three fantasy sandwiches.

  • Place the fantasy sandwiches on a cutting board or a serving plate and decorate them as you like: I used strips from a bread bag, wrapped them around the sandwich, and tied them with string. Finally, I decorated with a parsley leaf.

    These fantasy sandwiches can be made in advance and kept in the refrigerator until ready to enjoy. Enjoy! Paola
