Ingredients for the Phyllo Dough Rustic Pie

For this rustic pie, I used 11 sheets of phyllo dough measuring 14.5 x 9.8 inches: three for the base and eight for the topping. Various sizes are available, so adjust by eye based on the size you find. You can easily cut or fold them. The important thing is to handle them with care because they are quite delicate.

  • 11 sheets phyllo dough (14.5 x 9.8 inches)
  • 3.5 oz cooked ham (thinly sliced)
  • 4.2 oz edam cheese (thinly sliced)
  • extra virgin olive oil
  • sesame seeds

  • 1 Baking pan (11.8 x 7.9 inches)
  • Brush

Preparation of the Phyllo Dough Rustic Pie

  • Cut the first sheet of phyllo dough in half.

    Place one half at the bottom of an 11.8 x 7.9 inches baking pan lined with parchment paper and brush it with water. Lay the second half on top to cover the entire bottom and brush this part as well.

  • Repeat the same operation with two more sheets. In total, the base will consist of three sheets of phyllo dough, all brushed with water.

  • Now cover the base with slices of cooked ham, previously trimmed of any fat parts. 

  • Then make a layer with slices of edam cheese (you can substitute with fontina or mild provolone if you prefer)

  • Take a sheet of phyllo dough, fold it in half lengthwise, and scrunch it as shown in the photo.

  • Place the crumpled sheet over the filling. 

    Proceed the same way with seven more sheets until the entire surface of the pan is covered. 

  • Finally, brush the sheets with olive oil and sprinkle with sesame seeds. 

  • Bake the phyllo dough rustic pie with ham and cheese in a preheated static oven at 356°F for about 12/15 minutes or until golden brown. Remove from the oven and let cool slightly before serving. Enjoy! Paola
