A healthy breakfast for the whole family, especially for those following a low Glycemic Index diet.
Spelt cookies filled with orange are easy to make. You can make them with your little ones with any cookie cutter, or you can also use a glass if you don’t have cutters at home.
Between each cookie, I placed some sugar-free orange compote, the kind without peel, or the compote with peel, which is my favorite because it’s richer in fiber, but you can use other flavors of compote or even sugar-free protein creams.

Ingredients
Let’s go shopping.
- 1 egg
- 3.5 oz erythritol (or 1.16 oz of stevia)
- 1 packet vanillin
- 1 pinch salt
- 2 fl oz lemon juice (or orange juice)
- 2 tsp lemon zest
- 1.75 cups whole spelt flour (or other low G.I. flour or non-whole spelt flour)
- 4 tbsp sunflower seed oil (or coconut oil)
- 1 tbsp baking powder
- 2 oz sugar-free orange jam
- 1 oz erythritol (to be powdered)

Steps
Preliminary steps for all versions of the recipe
The egg should be at room temperature. Squeeze a lemon to get 2 fl oz of juice, then grate its peel, and sift the flour.
In a blender, blend 0.7 oz of erythritol until powdered, and set aside.
In a bowl, combine the egg, erythritol, and vanillin, and whisk.
Add the lemon juice and grated peel to the mixture, and while whisking, gradually add the oil and baking powder.
Now set aside the whisk and proceed by hand, adding the sifted flour to the mixture.
Knead and form a dough ball, wrap it in plastic wrap. Place in the fridge for at least 20 minutes.
After the time is up, divide the dough into 2 equal parts.
Place the dough pieces between 2 sheets of parchment paper, and with the help of a rolling pin, roll out the entire mixture to a thickness of about 1/16 inch.
The most exciting moment is coming, choose matching cookie cutters,
and create pairs,
and in half of them, make one or two round holes from where the compote will peek out.
Place the cookies on 2 or 3 baking sheets with parchment paper, and bake for 15 minutes in a static oven at 340°F for about 15 minutes.
Now the cookies are baked, let them cool, then on the half without the hole, place a teaspoon of compote and cover with the “twin” with the hole.
Dust with powdered erythritol, and here are the Spelt Cookies Filled with Orange, ready to enjoy.
Place 0.7 oz of erythritol in the bowl and powder for 5 sec. speed 10.
Set aside.
Now in the bowl, place the lemon peel with the other erythritol and powder for 15 sec speed 10.
Gather with the spatula,
insert the butterfly and add the egg and vanillin, whip at speed 3 for 3 min.
Add the lemon juice to the mixture and while beating with the butterfly in motion at speed 2, gradually add the oil and baking powder.
Now remove the butterfly, adding the sifted flour to the mixture.
Knead for 3 min. speed 2.
You will get an oiled and crumbly mixture, transfer it to the work surface,
and compact it with your hands, forming a dough ball, which you will wrap in plastic wrap. Place in the fridge for at least 20 minutes
After the time is up, divide the dough into 2 equal parts.
Place the pieces of dough between 2 sheets of parchment paper, and with the help of a rolling pin, roll out the entire mixture to a thickness of about 1/16 inch.
