Spelt Cookies Filled with Orange

Spelt cookies filled with orange, without sugar or butter.

Recipe by hand and also with the Thermomix.
A healthy breakfast for the whole family, especially for those following a low Glycemic Index diet.
Spelt cookies filled with orange are easy to make. You can make them with your little ones with any cookie cutter, or you can also use a glass if you don’t have cutters at home.
Between each cookie, I placed some sugar-free orange compote, the kind without peel, or the compote with peel, which is my favorite because it’s richer in fiber, but you can use other flavors of compote or even sugar-free protein creams.

If you’re not diabetic, you can substitute it with all-purpose flour, otherwise, I recommend almond flour mixed with cereal or whole wheat flour.
