The Apple pie is the typical American cake that almost everyone has surely seen in many movies and cartoons, and it is the classic cake that Grandma Duck used to bake and place on the window sill to cool, where the bear Onofrio would try to steal it.

In this vegan version, I’ve used Lucake’s shortcrust pastry recipe, varying only the type of oil used, opting for rice oil which I prefer in desserts because it doesn’t leave any particular odors as it is more delicate.

For the filling, I added dried plums for an even richer and sweeter taste.

This is also a perfect cake for Christmas, with a delightful aroma and truly suitable for everyone.

Ingredients for the vegan apple pie

  • 1 1/2 cups flour
  • 1/3 cup brown sugar
  • 3.5 tbsp rice oil
  • 2 3/4 tbsp water
  • 1 tsp baking powder
  • 1 pinch salt
  • as needed lemon (grated zest)
  • 2 apples
  • 2.8 oz dried plums (pitted)
  • 1/3 cup apple juice
  • 1.4 oz agave syrup
  • as needed lemon (grated zest + juice)
  • 1 pod vanilla
  • as needed oat beverage
  • as needed brown sugar

Preparation of the vegan apple pie

  • To prepare the vegan apple pie, first knead the vegan shortcrust pastry

  • In a bowl, mix the rice oil with cold water, brown sugar, a pinch of salt, and grated lemon zest, using a whisk to obtain a homogeneous mixture

  • Add the sifted flour and baking powder and start mixing with a spoon

  • As soon as the mixture starts to come together, transfer it to a work surface and continue kneading until you get a compact dough, which you will wrap in plastic wrap and refrigerate

  • While the shortcrust pastry rests, focus on the filling.

    Peel the apples and cut them into not too thin wedges, place them in a bowl with the plums, agave syrup, a few tablespoons of lemon juice, the grated zest, and the vanilla bean seeds.

    Then transfer everything to a non-stick pan and cook the fruit, adding the apple juice. Cook until the fruit is soft and caramelized and the juice has completely evaporated.

  • Take the shortcrust pastry out of the fridge and divide it into two parts. Roll out the pastry into two discs and use one to line a lightly greased baking dish. Prick the bottom with a fork

  • Fill the pastry with the apple and plum filling

  • Cover with the second disc of pastry, make cuts on the surface, and decorate with the remaining pastry scraps. Brush the surface of the vegan apple pie with oat beverage and sprinkle with a bit of brown sugar

  • Bake the vegan apple pie at 340°F for about 45 minutes, then remove from the oven and serve warm.
