Eggplant Pesto
A summer recipe, simple to prepare, obviously with the main ingredient, eggplants! We can use this pesto to season pasta, rice, or bruschetta!

Ingredients for Eggplant Pesto:
- 2 eggplants
- extra virgin olive oil
- 1.76 oz almonds
- 1.06 oz Parmesan cheese
- salt
- 1 clove garlic
Steps
For the preparation of eggplant pesto watch the video HERE.
First, take the eggplants and make some holes, then cook them at 356°F for 20/30 min. Once cooked, let them cool and then clean them. Meanwhile, toast the almonds in a pan.
Put them in a blender. Add the garlic, cheese and blend. Add the eggplants.
Add some salt, a bit of oil and blend. At the end, add some more oil on top!
