Oat and Dried Fruit Cake
Vegan recipe with traditional and Bimby cooking methods
A high-protein, low glycemic index vegan breakfast, sugar-free.
The classic porridge transformed into a ring cake with apple and oat flavor, and spiced to delight your taste buds.
The oat and dried fruit cake can be served for breakfast, snack, or even as a dessert after a meal. I used almonds and hazelnuts, but you can use whichever nuts you prefer.
Prepare it in advance and let it set overnight outside the fridge or for 6 hours in the fridge.
Serve at room temperature or, if cold from the fridge, warm each portion for 10 seconds in the microwave.
For those without glycemic issues, each portion can be enriched with maple syrup.

- 1/2 cup almonds
- 1/2 cup hazelnuts (or other shelled nuts)
- 3 cups apples
- 2 apples (set aside with skin)
- 4 tsp erythritol (or 1 tsp of stevia)
- 1/2 teaspoon ground cinnamon
- 2 pinches nutmeg
- 1/2 teaspoon ground turmeric
- 1 1/3 cups rolled oats
- 2 1/3 cups oat beverage (or other of choice)

Steps
Let’s get into the kitchen
Pot preparation: put the nuts in your food processor or blender and chop coarsely. Transfer to a small bowl and set aside.
Now in the same processor, put 3 cups of apples, and chop them coarsely.
Transfer the chopped apples to a non-stick pot and add the sweetener, cinnamon, nutmeg, turmeric, cook for 6 minutes, always stirring.
Add the oats, oat-based beverage, and cook for another 12 minutes over low heat, always stirring to prevent sticking.
Meanwhile, slice the apple into wedges.
Take a 9.5-inch ring cake pan, wet it with water, drain, and dust its inside with the chopped nuts we set aside,
remove the excess and save it for later.
Arrange the apple wedges with the skin in a radial pattern in the cake pan.
As soon as the porridge is ready, pour half of it into the mold, and then half of the chopped nuts
then the other half of the mixture and finally all the rest of the chopped nuts.
Let cool at room temperature for 8 hours. If in a hurry, after cooling at least 1 hour, transfer it to the fridge until set,
then place a plate on top of the mold and invert it.
Garnish with additional apple slices and nuts as desired
Put the nuts in the bowl and chop: 3 sec./speed 5. Transfer to a small bowl and set aside.
Place 3 cups of apples in the bowl, chop: 2 sec./speed 5. Gather at the bottom with the spatula.
Then, add the sweetener, cinnamon, nutmeg, turmeric, and flavor: 5 min./248°F/antiorario/speed spoon.
Add the oats, oat-based beverage, and cook: 12 min./194°F/antiorario/speed 1. Meanwhile, slice the apple into wedges.
Take a 9.5-inch ring cake pan, wet it and dust its inside with the chopped nuts we set aside, remove the excess and save it for later.
Arrange the apple wedges in a radial pattern in the cake pan.
