  • 14 oz pumpkin (already cleaned)
  • 7 oz feta
  • 1 sprig thyme
  • 1.4 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Half tsp black pepper
  • 1 tsp salt

Pumpkin and Greek Feta Pasta Recipe

  • Start preparing the pumpkin and feta pasta with the pumpkin. Clean the pumpkin – I used butternut – removing the seeds and skin. Cut it into cubes of roughly the same size and season with salt, black pepper, garlic powder, extra virgin olive oil, and a sprig of thyme.
    Mix well so that all pumpkin cubes are perfectly seasoned.
    Bake in a static oven at 428°F for about 30 minutes.

  • Remove the pumpkin from the oven and add a block of Greek feta.
    Put everything back in the oven for another 15 minutes.

  • Once ready, remove the pumpkin and feta from the oven and break up the cheese with a spoon or fork.
    Mix the two ingredients with a spoon until they are completely combined.

  • Cook the pasta in plenty of salted boiling water.
    Drain it directly into the baking dish with the pumpkin and Greek feta, making sure to save some of the cooking water.
    Start mixing, and if the pasta seems too dry, add a bit of the reserved cooking water.

  • Continue mixing with a spoon or ladle until you obtain a creamy and inviting pasta.
    Remember to remove the thyme sprig.

  • Immediately bring the pumpkin and feta pasta to the table, seasoning it to taste with more black pepper and/or a tablespoon of grated Parmesan.

  • What types of pumpkin can I use for this recipe?

    I used butternut. Delica, Hokkaido, or Mantovana work well too.

  • How long does it keep?

    No more than a couple of days in the refrigerator in an airtight container, although I recommend eating it fresh.

  • Can I use an air fryer?

    Yes, cook the pumpkin at 356°F for 20 minutes, adding the feta in the last 8-10 minutes.

  • Can I use other herbs?

    I recommend dried oregano or rosemary.
