Ingredients for the pistachio swirl cake:

- 4 eggs
- 2.4 oz vegetable oil
- 2.8 oz sugar
- 2.5 oz flour
- vanilla
- salt
- 4 tbsp water (Hot)
- 1.8 oz pistachio paste
- 4.2 oz mascarpone
- 3.5 oz pistachio cream
- to taste pistachio flour
- 1.8 oz sugar
- 5 oz whipping cream

Steps
The preparation of the pistachio swirl cake is very simple, watch the video HERE.
Base preparation:
First, separate the egg whites from the yolks. Add sugar to the egg whites and whip until stiff. Add some vanilla flavoring and salt to the yolks.
Add the hot water and whip. We need to obtain a light creamy mixture. Gradually add the oil and flour.
Add the pistachio paste and mix well. Gently incorporate the whipped egg whites a little at a time using gentle movements from top to bottom.
As soon as it’s baked, turn it over and remove the attached paper and let it cool.
Cream preparation:
In a bowl, place the pistachio cream, sugar, and mascarpone.
Mix well. Add the cream and whip.
Assembly:
Take the cold base, trim the edges, then cut 6 equal strips.
Spread the obtained cream on top (keep a few tablespoons for decoration). Spread and level it. Roll the first strip onto itself and place it in the center of the plate.
Place the other strips around it to form the swirl. Cover the edge with the kept cream and pistachio flour on top. Decorate as desired!
