Start preparing the avocado sandwiches by beating the eggs with a whisk or a fork in a bowl until yolks and whites are completely mixed. Season with salt and pepper and mix one last time.
Heat the extra virgin olive oil in a pan and pour the beaten eggs.
Cook the eggs for a few minutes, flipping the omelet when the top starts to solidify. Cook for another 2-3 minutes and set aside.Cut the avocados in half and remove the pit. Scoop out the flesh with a spoon.
Add the sour cream, salt, and black pepper.Add the juice of a lemon to the bowl with the avocados.
Blend everything with an immersion blender until you get a smooth and homogeneous cream.
Cut the pita bread in half.
Assemble the sandwiches this way: spread some avocado cream. Continue with washed and dried lettuce leaves (I used Gentilina lettuce). At this point, place the omelet on the bread and another spoonful of avocado cream.
Finish with the smoked salmon.The avocado sandwiches are ready. You can add some fried onion if you like.
