Ingredients for risotto with zucchini without butter:
- 1 cup rice
- extra virgin olive oil
- 1 1/4 cups vegetable broth
- 1 onion (Shallot)
Steps

In a pan, add some oil, the chopped onion (shallot) and sauté. Add the previously rinsed and well-drained rice.
Toast for a few minutes. Gradually add the broth and cook, stirring occasionally. Halfway through, add the grated zucchini.
