  • 2 avocados (or 3 small ones)
  • 1 red Tropea onion
  • 2 tomatoes
  • 1.75 oz cheddar
  • 1/3 cup sour cream
  • lemon juice (from half a lemon)
  • 7 oz chicken breast (whole or diced)
  • 2 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • salt

  • Start the preparation of the chicken and avocado burritos by cutting the chicken breast into fairly small cubes.
    Heat a pan with two tablespoons of extra virgin olive oil. Add the chicken and season it with salt, garlic powder, and smoked paprika.

  • Cook the chicken for about 15 minutes, stirring it occasionally.
    Transfer it to a bowl and let it cool slightly.

  • Cut the avocados in half and extract the pulp with a spoon, removing the central seed.
    Add the juice of half a lemon (or alternatively a lime).
    Mash the pulp with a potato masher or a fork (to be faster, you can use an immersion blender)

  • Add a finely chopped red Tropea onion and a pinch of salt to the mashed avocados.

  • Heat the tortillas in a pan for one minute on each side.
    Fill them starting with a slice of cheddar. Continue with the avocado, chicken, a tablespoon of sour cream, and some tomato slices.

  • Roll the tortilla with care to fold the sides so the filling does not spill out.
    Repeat the operation with the remaining tortillas.

  • Heat a non-stick pan or griddle. Add the tortillas and cook them for one minute on each side, starting with the closed side down.

  • Once cooking is complete, immediately serve your chicken and avocado tortillas!

    To stay in the Tex-Mex theme, I recommend Mexican Queso or Monterey Jack (not too aged).
