Microwave Stuffed Zucchini Boats are a “white” version of my Microwave Stuffed Zucchini, another of my zucchini recipes that is easy and tasty, and everyone will love for its simplicity! Perfect served as Appetizers during lunch or dinner, or as a main course! Over the years I’ve also made Stuffed Zucchini in a Jar, but these microwave stuffed zucchini boats are really delicious and very simple, and you can replace the ingredients with others you prefer!

Ingredients
- 4 zucchini (about 1 lb)
- 3.5 oz scamorza cheese
- 3.5 oz cooked ham
- 0.5 cup breadcrumbs
- 1 spring onion
- 2 tablespoons grated Grana Padano cheese
- 2 tablespoons extra virgin olive oil
- salt
- pepper
- parsley
What You Need to Cook the Stuffed Zucchini Boats
- 1 Microwave Oven
- 1 Microwave Tray
- 1 Container for steaming in the microwave
How to Prepare the Microwave Stuffed Zucchini Boats
Wash the zucchini, trim the ends and cut them in half lengthwise.
Place the zucchini inside the steam cooking container. Close and place in the microwave.
Cook the zucchini at 800W for 10 minutes.
Finely chop the ham and scamorza cheese, place them in a bowl and add breadcrumbs, grated cheese, salt, pepper, a tablespoon of oil, finely chopped parsley and mix.
When the zucchini are ready, carefully take them out and let them cool slightly.
Scoop out the zucchini pulp with a teaspoon and place it on a cutting board.
Clean the spring onion and add it to the zucchini pulp. Finely chop everything and transfer it inside the crisp tray.
Add oil to the tray and saute for 2 minutes at max power in the microwave.
Add the sautéed mixture to the other ingredients in the bowl.
In the same tray where you browned the mixture, place the zucchini, filling them one by one with the prepared stuffing.
Finally, add a handful of breadcrumbs and a drizzle of oil over all the zucchini.
Cook the stuffed zucchini boats in the microwave for 10 minutes with the combined microwave + grill function at max power.
Serve immediately or allow to cool slightly.
How to Store Microwave Cooked Stuffed Zucchini Boats
The microwave stuffed zucchini boats can be stored in the fridge for up to 4 days. You can freeze them already cooked.
