Ingredients for the lemon spiral cake:
- 4 eggs
- 1/3 cup vegetable oil
- 1/2 cup flour
- 6 tbsp sugar
- 4 tbsp water (Hot)
- salt
- lemon zest
- Half vial lemon flavor
- 3 tbsp lemon juice
- 2 tbsp limoncello
- 1 tbsp water
- 1/4 cup sugar
- 1 cup heavy whipping cream
- 4.2 oz mascarpone
- 1/4 cup sugar
- Half vial lemon flavor
- lemon zest

Steps
For the preparation of the lemon spiral cake watch the video HERE.
Base preparation: First, separate the yolks and whites. Add sugar to the egg whites and beat with electric beaters. Add a bit of vanilla to the yolks, salt.
lemon flavor and zest, hot water and beat them as well. We need to get a creamy mixture. Add the oil.
Add the flour a little at a time and mix well. Gradually incorporate the beaten egg whites with gentle movements from top to bottom. Put the obtained mixture into the mold, sprinkle and level.
Slightly beat then bake at 356°F for about 20 min. Once out of the oven, turn it upside down, remove the attached parchment paper, and let it cool.
Cut the edges then cut 5/6 equal strips (I got 6 strips, each 2 inches wide). Preparation of the syrup: In a container, put the sugar, the lemon juice.
Add the limoncello, water and mix. Soak the strips. Cream preparation: In a container, put the mascarpone, the heavy cream.
Add the sugar, lemon flavor, and zest and beat.
Spread it on top, leveling well with a spatula. Roll the first strip on itself and place it in the center of the plate.
Place the other strips around to form the spiral (see video). Add some more lemon zest on top and decorate as you like!
