The recipe to prepare the Pugliese castagnelle is very simple, slightly toast the almonds, chop them and combine all the other ingredients then cut the dough into pieces and bake them.
The name does not derive from the presence of chestnuts but rather from the shape, although they are often found as lozenges rather than round, in any case, they are excellent and often flavored with coffee; I used cooked wine.

Ingredients
- 1 cup all-purpose flour
- 1 cup almonds
- 2 tbsps sugar
- 2 oz chocolate
- 1 tsp baking powder
- 1 pinch ground cinnamon
- 1 pinch salt
- 2 tbsps cooked wine (or water)
- orange zest
- 1 tbsp unsweetened cocoa powder
Steps
Slightly toast the almonds in the oven at 350°F for about 5-7 minutes.
In a bowl, pour the flour, cocoa, cinnamon, baking powder, and salt. Add the sugar and grated orange zest.
Coarsely chop the almonds, do not reduce them to flour, and mix well.
Melt the chocolate in a bain-marie.
Add the cooked wine and mix the dough then add the chocolate and mix well until you obtain a soft, slightly sticky but workable mixture.
Form logs, flatten them and cut them into pieces.
Arrange them on the baking sheet and bake in the preheated oven at 350°F for about 15 minutes.
Remove from oven and let cool then sprinkle with powdered sugar.
