The Panspeziale or Certosino of Bologna is an ancient traditional Christmas cake, rich in spices and nuts, honey, and chocolate. It is a very simple to prepare sweet, very soft and crunchy at the same time.
The recipe to prepare the panspeziale is very simple, melt the butter with the chocolate, mix all the powders then the honey and the melted chocolate, stir and pour into the pan.

Ingredients
- 2 cups all-purpose flour
- Half packet baking powder
- 1 pinch salt
- 1 pinch pepper
- 1 pinch ground cloves
- Half teaspoon ground cinnamon
- 1 pinch nutmeg
- 0.5 cup sugar
- 0.5 cup honey
- 3.5 tbsp butter
- 2.6 oz dark chocolate
- 3 tbsp water
- 0.5 cup almonds
- 0.5 cup walnuts
- 0.5 cup pine nuts
- 0.5 cup raisins
- 0.5 cup candied fruits
Steps
Melt the chocolate with the butter and set aside, also melt the honey.
In a bowl, pour the flour with sugar, baking powder, salt, spices, and add the almonds, pine nuts, walnuts, and the raisins rehydrated in water and patted dry.
Add the honey and melted chocolate, mix everything well then add water, if it seems too hard add more, but always a little at a time.
Pour the mixture into a 9-inch diameter cake pan, mine is 9 inches, decorate with candied fruits and nuts as you like.
Bake in the preheated oven at 320°F for about 40 minutes, if it seems to darken too much cover with foil.
