The recipe for making stuffed mini pizzas is very simple, you prepare the dough with flour, water, oil, yeast, and salt, I think we all have these at home, then decide how to stuff them after cooking. I had mortadella, salami, and provola in the fridge; I could have also added some color with arugula, for example.

Ingredients
- 1 1/4 cups all-purpose flour
- 1 teaspoon active dry yeast (or instant)
- 1/4 cup water
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- salami
- mortadella with pistachios
- provola
Steps
If you’re using active dry yeast, place it in a small bowl with a bit of water, stir, and dissolve well.
Pour the flour into the bowl, add the oil, the yeast, mix a bit, then add the rest of the water and oil.
Knead well, form a ball, and let it rest in the bowl covered with plastic wrap for 30 minutes.
If using instant yeast, let it rest for 15 minutes.
Roll out the dough on the worktop and cut it with a round cutter or a glass.
Heat some oil in a pan and cook the mini pizzas, turning them, with the lid closed.
Remove from the pan, cut in half, and stuff with salami or mortadella and provola; if you prefer, you can return them to the pan to melt the cheese.
