- 2 cups digestive biscuits
- 7 tbsps butter
- 1.7 cups heavy whipping cream
- Half lemon peel
- 1.25 cups plain Greek yogurt
- 0.6 cup sugar
- 3.5 oz blueberries
- 3.5 oz raspberries
- 2 tbsps sugar
- 1 tbsp lemon juice

Steps for Preparing the No-Bake Yogurt Cake
To prepare the cake, start by melting the butter in a double boiler or microwave. Crush the biscuits and mix them with the butter. Line the cake pan with plastic wrap. Pour the mixture and press to form the base and sides. Place in the fridge.
Whip the cream with the electric whisk. Gradually add the sugar, and when it’s well whipped, flavor with the lemon zest and then the yogurt, stirring with a spoon until you have a homogeneous cream. Pour the yogurt mousse on the biscuit base. Place in the fridge until the next day.
In a pan, put the red fruits, sugar, and lemon juice. Cook for 10 minutes, mashing the fruits with a fork. Let it cool completely. Remove the springform pan and plastic wrap. Place the cake on a plate and garnish with the fruit sauce before serving. If you want a cold cake without even cooking the sauce, you can replace it with your favorite jam.
