RUSTICHELLA with EGGPLANTS in a Pan

Ingredients

  • 2 black oval eggplants
  • 3.5 oz provola
  • 1/2 cup water
  • 1 pinch salt
  • 1 2/3 cups all-purpose flour

Steps

  • Pour the flour into a bowl, add the salt, oil, and water, mix and knead well.

  • Move to the work surface, work the dough a bit then divide it into two parts and roll them out.

  • Cut the eggplants into chunks and cook them in a skillet with oil keeping it covered.

  • Seal the edges and prick with a fork.
