Lemon Cream with Only 3 Ingredients and No Gelatin!

The LEMON CREAM with only 3 ingredients has no gelatin! A real treat! Perfect to serve as a spoon dessert in small bowls or glasses but also excellent as a filling for pies and cakes! You’ll taste the wonderful flavor it leaves in your mouth, delicate and velvety, truly too good! In the measurements, I’ve provided for 2 bowls as a dessert to finish a meal, but you can serve this cream in smaller glasses (like espresso cups) for mini tasting portions. Now, hurry and make it because it takes very little time! Oh, I forgot, nothing needs cooking!

Ingredients for preparing lemon cream with only 3 ingredients

  • 12 oz Cream cheese
  • 5 tablespoons Sugar (or 5 of erythritol or 2 scant of stevia)
  • 1 Lemon (grated zest of the whole lemon and half of the juice)

Preparation of lemon cream with only 3 ingredients

  • Take the cream cheese and place it all in a large bowl.

  • Add the sugar and mix well using a spoon or electric beaters on low speed.

  • Now add the grated zest of one lemon and incorporate it with the rest.

  • Finally, add the juice of half a lemon and mix it well with a spoon (beaters would deflate the cream too much at this point, so I don’t recommend them) until you obtain a smooth, thick, and creamy mixture.

  • At this point, pour the cream into the bowls (I used 2 medium-sized ones) or glasses, cover with plastic wrap and place in the refrigerator until ready to serve. You can prepare them in advance!

  • USEFUL TIPS: 
    You can garnish with freshly sliced lemon slices (as I did) or with caramelized lemon slices (simply cook them in a pan with some sugar for 5 minutes).
    Alternatively, you can also replace the sliced lemon with lemon jelly for garnish.
