In my case, I used smoked scamorza cheese, but you can also add bacon, eggplants, bell peppers, or smoked cold cuts. You can prepare them well in advance, and they even improve in flavor. Assemble them the day before, cover with plastic wrap, and bake them half an hour before serving.

Ingredients
- 2 tablespoons extra virgin olive oil
- 1/2 onion
- 1 1/4 cups ricotta cheese
- 1/3 cup grated Parmesan cheese
- 10.5 oz egg lasagna
- 7 oz smoked scamorza cheese
- 1 cup tomato sauce
How to make Smoky Lasagna
Finely chop the onion, then sauté it in a pan with a drizzle of extra virgin olive oil.
Add the tomato sauce and cook for 10 minutes, then season with salt and pepper.
Cook the sauce for another 10 minutes, then pour it into a bowl and let it cool slightly.
Add the ricotta cheese and mix until you get a creamy texture.
Spread a bit of sauce on the bottom, then add a layer of fresh pasta, slices of smoked scamorza cheese, and grated Parmesan cheese.
Create several layers, ensuring the last layer is saucy, then sprinkle with grated cheese. Bake your lasagna at 356°F for about 15-20 minutes. Remove from the oven and let them cool for about 10 minutes before serving.
Storing Smoky Lasagna
Once cooled, they can be stored in the refrigerator covered with plastic wrap. If you used fresh ingredients, you can freeze them for up to 3 months. They can also be frozen uncooked.
