  • Start the preparation of the turkey meatballs with peppers by tearing the white bread into a bowl and soaking it in water or milk for a few minutes.
    Add to the ground turkey the salt, black pepper, chopped chives, and grated parmesan cheese.
    Wash and clean a red bell pepper and cut it into very small cubes: add this to the meatball mixture as well.

  • Give a quick first mix and add a medium-sized egg and mix again until all the ingredients are perfectly combined with each other.

  • Also add the previously squeezed white bread to the bowl and mix again: you should obtain a soft but not sticky mixture.

  • Form the meatballs by rolling a spoonful of the mixture between slightly dampened hands.

  • Heat a couple of tablespoons of extra virgin olive oil in a pan. Cook the meatballs over low heat for about 5 minutes, adding a bit of water if needed.
    Turn them and cook for another 5 minutes.

  • Serve immediately the turkey meatballs with peppers.

    Cooked, a couple of days in the refrigerator in an airtight container.

  • Can I use other herbs?

    Yes, you can try parsley, lemon thyme or classic thyme, lemon balm, rosemary or cilantro.

  • Can I use a different type of pepper?

    Of course, but it slightly changes the taste: yellow pepper or green peppers are sweeter than red pepper.
