The big cookie cake with Nutella and chocolate is an easy and quick dessert to prepare, made with shortcrust pastry, with coffee in my case, it’s great to dunk in milk in the morning or as a snack dessert.

It is prepared in a few minutes without using a food processor, it’s not necessary, I kneaded by hand, rolled out the shortcrust pastry, stuffed and closed it, only the bowl and a spoon were dirtied and this big cookie with Nutella and chocolate was literally devoured, it goes like hotcakes.

Ingredients

  • 7 oz all-purpose flour
  • 1 egg
  • 5 tbsp butter
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1 tbsp instant coffee
  • 1 oz chocolate (chips or pieces)
  • Nutella®

Steps

  • Pour the flour into a bowl, add the sugar, baking powder, butter in pieces, the egg, and a pinch of salt, start working then add the coffee, instant or from the moka.

  • Add the chocolate and move to the work surface, mix the ingredients well until you get a smooth shortcrust pastry.

  • Roll out on parchment paper and create a sort of rectangle, fill with Nutella and fold in half.

  • Seal the edges and bake in a preheated oven at 350°F for about 20 minutes or with the air fryer at 350°F for 15 minutes, turn and bake for another 3-4 minutes.

  • Take it out of the oven and let it cool, sprinkle with powdered sugar and cut into pieces.
