Today vegan lentil cream, perfect if you have vegan guests at dinner during the holidays (but not only!), those who follow me know that I’m not vegan but given my dairy intolerance, I sometimes prefer vegan foods without having to go crazy reading product labels to see if there are any dairy products, so I created this super quick and easy recipe using products with the vegan ok brand, you will only need a bowl and a hand blender, you don’t have to cook anything! Vegan lentil cream that is perfect to spread on some toasted crostini!

Ingredients for Vegan Lentil Cream

  • 1 1/3 cups Pre-cooked lentils
  • 1 oz Walnuts (toasted)
  • 1 tbsp Extra virgin olive oil
  • 1 pinch Sea salt
  • 1 tsp Chives (dried or fresh, I use dried)
  • 1 pinch Garlic powder
  • 1 pinch Black pepper (freshly ground)
  • 1 Whole grain bread (enough for each guest, 2 slices)

Preparation of Vegan Lentil Cream

  • Drain the pre-cooked lentils well from their liquid in the jar and rinse them under running water for 2 minutes, pat them dry with a paper towel.

  • In a bowl, pour the drained lentils, garlic powder, salt, pepper, chives, toasted walnuts, and oil, and with the help of a hand blender, blend everything well until you get a thick and lump-free cream (to avoid splattering lentils all over the kitchen, cover the bowl with film before blending, inserting the hand blender from one side).

  • The vegan lentil cream is ready to be used, toast the whole grain bread on a griddle, cooking it for 3 minutes on each side, then spread the cream with a spoon and serve, sprinkling with more chives.

  • If you don’t use the vegan lentil cream immediately, you can store it in the fridge in an airtight container, you can also prepare it the day before to have it ready to serve on time.

That Extra Touch…

The vegan lentil cream can be enhanced by adding a pinch of grated ginger, excellent served both cold and hot.
