Those who follow me know that I am not vegan but due to my dairy intolerance, I sometimes prefer vegan foods instead of going crazy reading product labels to see if there’s any dairy. So, I created this super quick and easy recipe using products with the vegan OK mark. You will only need a bowl and a hand blender, no cooking required! Vegan lentil cream that is perfect for spreading on toasted crostini!

Ingredients for the Vegan Lentil Cream
- 9 oz Precooked Lentils
- 1 oz Walnuts (toasted)
- 1 tbsp Extra Virgin Olive Oil
- 1 pinch Sea Salt
- 1 tsp Chives (dried or fresh, I used dried)
- 1 pinch Garlic Powder
- 1 pinch Black Pepper (freshly ground)
- 1 Whole Wheat Bread (enough for each guest, 2 slices)

Preparation of the Vegan Lentil Cream
Drain the precooked lentils well from their jar liquid and rinse them under running water for 2 minutes, pat them well with paper towels.
In a bowl, pour the drained lentils, garlic powder, salt, pepper, chives, toasted walnuts, and oil, and blend everything well with a hand blender until you get a thick, lump-free cream (to avoid splattering lentils all over the kitchen, cover the bowl with plastic wrap before blending, inserting the hand blender from one side).
The vegan lentil cream is ready to use. Toast the whole wheat bread on a griddle, cooking it for 3 minutes on each side, then spread the cream with a spoon and serve, sprinkling with more chives.
If you’re not using the vegan lentil cream immediately, you can store it in the fridge in an airtight container. You can also prepare it the day before so it’s ready to serve when needed.

The vegan lentil cream can be enhanced by adding a pinch of grated ginger, excellent served both cold and hot.
