Ingredients
- 2 1/2 cups all-purpose flour
- 1 2/3 cups cake flour
- 1 teaspoon salt
- 1 1/2 cups water
- 3/4 tsp fresh yeast
- 7 oz onion
- 10 1/2 oz potatoes
- 5 1/4 oz provolone cheese
Steps
Dissolve the yeast in the water, pour the flour into a bowl, add the water little by little, work it, add the salt, and knead well.
The dough will be a bit sticky, oil your hands to work it better, make a ball and let it rest until it doubles in size.
Slice the onions thinly and place them in a pan with 1 glass of water and one of white vinegar and let cook for 5 minutes after boiling.
Slice the potatoes not too thickly and boil for about ten minutes, then drain them well.
When the dough has risen, divide it into two parts and spread them in baking pans or on a baking sheet lined with oiled parchment paper.
Let it rest for about ten minutes.
Preheat the oven to 482°F, top the pizza with provolone, potatoes, and onions, oil it, and bake.
Bake for 5 minutes, lower the temperature to 428°F, and continue for about 10 minutes.
