Pan-Seared Squid with Potatoes and Onions

This is one of my favorite seafood mains, Pan-Seared Squid with Potatoes and Onions. The only hassle is the thorough cleaning of the squid. But if you have the opportunity to have them cleaned by your trusted store, the recipe becomes super quick. It could even become a topping for pasta which I assure you I have tried and it’s fantastic. I don’t know about you, but as an Apulian, I particularly love seafood dishes and I recommend this one 100%. Ingredients

  • 1.76 lbs squid
  • 3 onions (small)
  • 2 carrots
  • 1 stalk celery
  • 1 bunch parsley
  • 1 clove garlic
  • 4 potatoes (medium)
  • to taste extra virgin olive oil
  • 1 glass white wine
  • 1 glass water
  • to taste salt
  • to taste pepper

Tools

  • 1 Pan
  • Mixer
  • 1 Cutting Board

Steps

  • The first thing to do is thoroughly clean the squid by removing the innards and rinsing them well. I bought them already cleaned.

  • Slice the onions

  • Finely chop the carrots, celery, garlic, and parsley in a chopper.

  • Cut the potatoes into chunks.

  • Sauté the mix of flavors in a pan with a little olive oil.

  • Add the onion and mix well with the flavors.

  • Add the water.

  • Add the potatoes and cook for about 15 minutes

  • Add the squid

  • Deglaze with the white wine.

  • Add the salt

  • and pepper

  • Cook for another 5 minutes and serve
