Making popsicles at home is very easy and quite fast. Today we’re talking about these aromatic, thirst-quenching, and refreshing ginger and lemon popsicles, perfect for fighting summer heat and humidity; a treat the whole family will enjoy. They contain no artificial colors, lactose, milk proteins, eggs, or gluten. The popsicles are made with few and simple ingredients and can be customized as we like.

Ingredients
- 2 cups water
- 4 oz granulated sugar
- 1 large lemon
- to taste fresh ginger root (3/4 inch is more than enough)

Steps
1) Wash, scrub the lemon peel and grate it finely. Also, finely chop the ginger after removing the outer skin.
2) Fill a saucepan with 2 cups of water, add the sugar, lemon peel, and grated ginger.
3) Cover and bring to a boil. Allow the syrup to boil for a couple of minutes, then turn off and let it cool (make sure the sugar has completely dissolved). Only when the syrup is cold, add the filtered lemon juice (about 2-2.5 oz, depending on taste).
4) Mix well, strain, and fill the molds, inserting the plastic stick they usually come with.
5) Leave the popsicles in the freezer for at least 3-4 hours, to ensure they don’t break when removing them from the molds.
6) To safely remove the popsicles, rinse the molds under cold running water for a few seconds.
That’s it; the ginger and lemon popsicles are ready.
Extra tip. If we want to use the typical wooden sticks, let the popsicles freeze for at least an hour and a half before inserting them. This way, the popsicles will no longer be liquid but not overly frozen either.
Traditional molds can be replaced with plastic cups.
