I’ve been wanting to remake the FLAN CAKE WITH CUSTARD AND SPONGE CAKE, also known as the MAGIC CAKE, for a long time. A dessert that suddenly exploded on the web years ago and was remade in various versions, such as coffee, chocolate, etc. I wanted to savor it in its simplicity, that is, vanilla. Very few ingredients that really create an incredible magic in a single batter. To naturally obtain the three layers, you need to follow certain rules; in fact, the first advice I give you is to use all ingredients at room temperature and follow the preparation order carefully and meticulously, and you’ll see that you too will achieve a perfect magic cake.

Ingredients
- 4 eggs (medium at room temperature)
- 2/3 cup sugar
- 1 tbsp water
- 1 tbsp vanilla extract
- 8.5 tbsp butter (melted and brought to room temperature)
- 1 cup all-purpose flour (sifted)
- 2 cups whole milk (at room temperature)
- 1 pinch salt
- as needed powdered sugar (for dusting)

Steps
The first thing to do is to separate the yolks from the egg whites, which must be at room temperature.
Add the sugar and tablespoon of water to the yolks
Beat with the electric whisk until the mixture is light and frothy,
Add the natural vanilla extract and mix
Add the melted butter, brought to room temperature
After incorporating the butter well, add the sifted flour. Add it in two parts
Continue to add the flour and mix the batter
Now slowly add the milk at room temperature
You will get this liquid consistency
Separately, beat the egg whites
Add a pinch of salt.
Whisk until stiff peaks form.
Add part of the egg whites.
Mix with a whisk with slow movements from bottom to top
Combine the rest of the egg whites
We will get a liquid and lumpy batter.
Line a 8-inch pan with parchment paper
Pour the batter and bake in a preheated oven at 302°F for 75 minutes
Let it cool at room temperature
Remove the parchment paper and let it cool in the fridge for 2 hours
Dust with powdered sugar and serve
