I don’t know about you, but in summer I feel like cooking equals zero, so I often make this chicken salad, a very easy and summer recipe. Personally, I also find it practical because it can be prepared in advance and eaten when needed, and if you have to go on a picnic, it’s the perfect dish to bring with you! Ingredients
- 10 oz Chicken breast (sliced)
- 1 Cucumber
- 5 Pickled gherkins
- 1 cup Canned yellow corn kernels
- 1 Tropea red onion
- 5 oz Cooked ham (two thick slices)
- 2 tbsp Tartar sauce
- 2 tsp Extra virgin olive oil
- 1 tsp Fine salt
- 1 tsp Black peppercorns (freshly ground (optional, to taste))
- 1 tsp Aromatic salt

Preparation
Heat a grill pan well over high heat, sprinkle the aromatic salt on the pan, and place the chicken breast slices on top. Cook for 8 minutes, turning once halfway through cooking, and let cool.
Once the chicken breast is cold, cut it into strips and then into small squares and pour them into a bowl.
Peel the cucumber, cut it in half lengthwise, and slice thinly, adding to the chicken.
Peel and thinly slice the Tropea onion, separate the rings and add them to the bowl with the chicken and cucumbers.
Now drain the corn and pickled gherkins well, add the corn as it is, and chop the gherkins before adding them.
Cut the cooked ham into strips and then into small squares and add it to the bowl with the rest of the ingredients.
Now add the tartar sauce, oil, salt, and pepper (optional) and mix well, combining all the ingredients. Cover with plastic wrap and place in the fridge for at least 1 hour before serving so that it is well chilled when eaten! Before serving, if desired, garnish with a fresh basil leaf.
ADVICE & ALTERNATIVES
To make this chicken salad even lighter, replace the 2 tablespoons of tartar sauce with 2 tablespoons of plain yogurt (soy or regular) and add a mixed chop of basil, thyme, and the grated zest of a lime. You’ll taste how fresh and light it is and how delicious! You can also use leftover roast chicken breast for this recipe!
