Recipe for Cucumber Rolls with Salmon

  • Start the preparation of the cucumber rolls with salmon and cheese by washing the cucumber and slicing it thinly with a mandoline or a vegetable peeler.

  • Place the cucumber slices on a cutting board (if you’re not confident in forming the roll, you can cover it with food wrap) slightly overlapping each other.

  • Spread the fresh spreadable cheese on half of the cucumbers. Continue with the smoked salmon and a finely chopped fresh scallion.

  • Form the roll by folding the cucumbers lengthwise. Divide the large roll into eight pieces with a smooth-bladed knife.
    Serve the cucumber rolls with salmon and cheese accompanied by soy sauce or sweet and sour sauce as desired.
