- 1 1/3 cups all-purpose flour (or low glycemic index)
- 2/3 cup coconut flour
- 1/2 cup unsweetened cocoa powder
- 2/3 cup erythritol (or 1/2 cup sugar or 3 tbsp Stevia)
- 1 1/8 cup low-fat milk (or plant-based milk)
- 1/2 cup Greek yogurt 0% fat (or plant-based)
- 1 packet baking powder
- 2 tsp orange zest
- 1 pinch salt

- 1 Electric whisk or the Thermomix
- 1 Pan bundt pan, 9 inches
Steps
Preparation in Bowl
In a large bowl, add the all-purpose flour and coconut flour, mix, then add the baking powder and cocoa powder. Also add the sweetener (or sugar) and a pinch of salt.
Pour in the milk and gradually add it to the dry ingredients while mixing with an electric whisk. After the milk, add the yogurt, gradually and continue mixing.
Pour it into a 9.5-inch diameter bundt pan previously greased and floured or lined with parchment paper.
Bake in a static oven, preheated at 356°F, for 35-40 minutes.
At the end of baking, check with a toothpick test. Remove the cake from the oven and let it cool on a rack, then gently unmold it.
Insert the butterfly whisk into the Thermomix bowl, then add the 2 flours, the baking powder, the cocoa powder, the sweetener, a pinch of salt, and the milk. Mix for 3 min. at speed 3.
Then add the yogurt, gradually, still with the butterfly whisk for 2 min at speed 3.
Finally add the finely grated orange zest for 1 min. at speed 2. Remove the butterfly whisk.
Pour the mixture into a 9.5-inch diameter bundt pan previously greased and floured or lined with parchment paper.
Bake in a static oven, preheated at 356°F, for 35-40 minutes.
At the end of baking, check with a toothpick test. Remove the cake from the oven and let it cool on a rack, then gently unmold it

This cake can be stored under a dome for 3/4 days, and once portioned can also be put in the freezer for up to 3 months, so you can enjoy it fresh every day
