I had quite a few peaches that were going bad, so I decided to cut them, cook them, and make a delicate peach and mascarpone mousse, a semifreddo, enriched with some crumbled amaretto cookies.

A real delicacy, easy and quick, the peach mousse with mascarpone and cream is the fresh and pleasant summer dessert you absolutely have to try. It is made in no time, chilled in the fridge or freezer, as it is still a semifreddo, and it is spooned to enjoy.

PEACH MOUSSE with mascarpone

Ingredients

  • 9 oz mascarpone
  • 2/3 cup whipping cream
  • 10.5 oz peaches
  • 3 oz sugar
  • 1/2 cup water

Steps

  • Peel and cut the peaches into pieces, place them in a saucepan with the sugar and water, let them cook for about ten minutes after boiling, they should soften.

  • Turn off and let it cool down.

  • Place the mascarpone in a bowl, add the cream and whisk a bit, add the peach syrup and work well with the beaters, you will get a velvety cream.

  • Blend the peaches with a mixer.

  • Place some amaretto cookies at the bottom of the cups, make a layer of peaches and one of cream, decorate with an amaretto and put in the fridge until serving.
