Crispy Salad with Feta and Cherry Tomatoes, fresh and quick, a delicious salad with freselle made whole wheat with feta, red cherry tomatoes and yellow date tomatoes. An easy idea for a summer dinner, perfect against the heat: without cooking anything, ready in five minutes, tasty and genuine! Preparing the salad is very simple: the freselle are not softened, just crumbled into a bowl and seasoned with Greek feta, red cherry tomatoes and yellow date tomatoes, cucumbers….. The ingredients can be whatever you prefer: enrich with corn, celery, olives….. or vary with grilled vegetables, legumes such as beans, chickpeas….

The freselle can be classic or whole wheat, or they can also be gluten-free if you have gluten intolerance issues.

Ingredients

LET’S SEE WHAT WE NEED TO PREPARE

  • 7 oz fresella (Frisella) (whole wheat)
  • 3.5 oz yellow cherry tomatoes
  • 3.5 oz red cherry tomatoes
  • 1 cup cucumber
  • 3.5 oz feta
  • oregano
  • salt
  • 3 leaves basil
  • extra virgin olive oil

  • 1 Spoon

Steps

Let’s Start Preparing

  • Start preparing crispy salad; wash the tomatoes and cut them into four parts or halves depending on the type of tomato you will use.

    Wash the cucumber well, if organic it can be used with the skin, otherwise it is advisable to peel it and cut it into slices.

  • In a large bowl combine the cherry tomatoes, the Greek feta cut into cubes. Mix and season with salt, oregano, basil, and olive oil.

    Break the freselle into pieces and add them to the salad. Mix so that it is well flavored and, if necessary, season with a little more olive oil.

Our crispy salad is ready to be enjoyed, although I recommend letting it rest for half an hour so it flavors perfectly.
