Start preparing the salmon stuffed eggs by boiling the eggs in boiling water for 8 minutes or placing them directly in a small pot with cold water and cooking them for 13-15 minutes in total.
Drain the eggs in cold water, let them cool slightly, and peel them carefully. Cut them lengthwise and remove the hard yolks into a bowl.Add the fresh spreadable cheese, chopped chives, and black pepper to the yolks. Mix until the yolks are completely blended with the other ingredients.
Finely chop the smoked salmon, add it to the yolk cream, keeping some aside.
Transfer the mixture to a piping bag fitted with a star nozzle and fill the hard egg whites.
Finish the preparation of the salmon stuffed eggs by decorating the eggs with the reserved smoked salmon and some more chopped chives.
Salmon Stuffed Eggs
You can serve these eggs as a main course or as an appetizer/snack. If you don’t like fresh spreadable cheese, you can substitute it with goat ricotta or robiola.
