NEAPOLITAN PANUOZZO WITH HAM AND PROVOLONE

Ingredients

  • 5 oz all-purpose flour
  • 12 oz all-purpose flour
  • 1.5 cups water
  • 0.07 oz fresh yeast
  • 0.1 oz salt
  • 1 tbsp extra virgin olive oil
  • 8.8 oz provola cheese
  • 5 oz ham

Steps

  • Pour the flours into a bowl, dissolve the yeast in the water, then gradually add it to the flour while stirring.

  • Add the salt, make a ball, and let it rest in a bowl covered with plastic wrap until doubled in size, about 4 to 6 hours.

  • After this time, take the dough and shape it into the panuozzo on a sheet of parchment paper or in an oiled baking tray.

  • The shape is similar to an oval pizza, then oil it and let it rest for 10 minutes.

  • Preheat the oven to the maximum temperature for 10 minutes, then lower it to 430°F and bake for about 15 minutes.

  • Remove from the oven, cut the panuozzo, and fill it with slices of provola and ham, then bake again for a few minutes at 356°F

  • Cut the panuozzo into 2 or 3 pieces.
