Ingredients for making the ricotta omelette
- 10.5 oz cow's milk ricotta (from the day before)
- 3 eggs
- 1 tbsp Grana Padano cheese, grated
- 2 sprigs parsley
- 2 pinches salt
- 2 pinches pepper
- extra virgin olive oil (to brush the pan)

- 1 Microwave Tray Crisp type heating tray, 8.5 inches
- 1 Bowl
- 1 Hand Whisk
Procedure
Wash, dry, and chop the parsley. Crack the eggs into the bowl, add the parsley, salt, pepper, and grated cheese. Mix the ingredients and then add the ricotta. Using the whisk, break up and blend the ricotta with the eggs.
Grease the bottom and sides of the tray, pour in the egg and ricotta mixture, and level it with the back of a spoon. Insert the rack into the microwave, place the tray on top, and start cooking for 13 minutes with the combined microwave function (600 watts) plus grill. This way, you will be closer to the grill and the omelette will cook more evenly. At the end of cooking, let the microwave ricotta omelette rest in the turned-off microwave for 5 minutes.
