Ingredients
- 9 oz chicken breast
- 12 cherry tomatoes
- 12 mini mozzarella balls
- extra virgin olive oil
- salt
- herbs (basil, thyme, or others)

- 6 Skewers bamboo

Preparation
Clean the chicken breast by removing small bones and tendons.
Cut it into chunks and season the meat with a pinch of salt, herbs to taste, and a drizzle of oil.
Thread the chicken onto the skewers, alternating with the cherry tomatoes. Leave a little space at the ends as you’ll need it later.
Heat a non-stick pan (or a grill pan) and place the skewers. Cook them for about ten minutes, or until the chicken is done.
Once ready, remove them from the pan and let them cool for a few minutes.
Add the mozzarella balls at the ends, 2 per skewer.
Transfer them to a platter and enhance with a few basil leaves, or other fresh herbs.
The caprese chicken skewers are ready to be served!
