Frozen Yogurt Bars with Apricots and Nuts

Frozen yogurt bars are Greek yogurt bars enriched with fresh and/or dried fruits, perfect as a summer snack. They are very easy to prepare and naturally do not require baking. I decided to enrich my bars with fresh apricots and a mix of nuts and pretzels, but you can customize them as you prefer!

  • 1 1/3 cups Greek yogurt
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 apricot
  • mixed nuts

Frozen Yogurt Bars Recipe

  • Begin preparing the frozen yogurt bars by mixing Greek yogurt with vanilla extract and maple syrup (alternatively, you can use honey or another sweetener of your choice) in a bowl.

  • Transfer the yogurt onto a cutting board or tray covered with parchment paper or a silicone mat. Level it with a spatula or the back of a spoon.

  • Add a chopped apricot and a mix of nuts of your choice to the yogurt: mine consisted of peanuts, cashews, caramel peanuts, and pretzels.
    Place in the freezer to set.

  • Once the yogurt is frozen, cut the bars with a knife.
    Enjoy your frozen yogurt bars immediately or store them in the freezer.

For this recipe, I chose to use apricots, but you can naturally replace them with your preferred fruit. The same goes for the mix of nuts: you can omit it or replace it with another type you like. Additionally, you can add dark chocolate.
