How to make cookies, with sugar and without.
Traditional recipe or with the Thermomix.
Today I want to present my cookies, the typical American cookies, but with some variations and precautions, for those who do not want to use sugar.
Additionally, you can vary the use of dark chocolate and replace it with milk chocolate or white chocolate, but you can make our cookies by adding to the mixture pine nuts, raisins, chopped pistachios, almonds, or even hazelnuts, and even all together while still respecting the proportions indicated above for dark chocolate.

- 1.75 cups all-purpose flour (or whole grain or cereal)
- 1 cup chocolate chips (or chopped nuts or milk or white chocolate.)
- 1 egg
- 1 tsp vanilla extract
- 1 pinch salt
- Half tsp baking soda
- 3/4 cup sugar (Or 100 erythritol)
- Half tsp baking powder
- 1/2 cup butter

- 1 Electric whisk or the Thermomix
- 3 Baking trays low
- 1 Parchment paper
Steps
Traditional Recipe
Place chocolate chips in the freezer at least 30 minutes prior.
Then in a bowl, using the whisk, beat the butter with the 2 sugars or sweeteners,
until the mixture appears frothy.
Add the vanilla extract, and the egg, and continue to beat.
Add the baking soda and the sifted flour, little by little, always with the whisk in motion, or if you prefer, use your hands.
As soon as the mixture appears smooth and homogeneous, remove the whisk, add the chocolate chips, and mix with a spoon.
Preheat the oven to 320°F (160°C) static, and let it heat well.
With 2 spoons or with damp hands, form balls of 1.5 inches (3.81 cm) in diameter
and place them on a baking sheet lined with parchment paper. Make sure they are well spaced apart, as they could spread and stick to each other as they bake.
Bake for about 20 minutes, but check as you go to ensure the edge of each cookie is well browned, which indicates they are done.
If your oven cannot fit all the dough, it’s best to keep the remaining dough chilled, preferably in the fridge, and take it out only when needed.

Insert the butterfly in the Thermomix and whip the butter with the 2 sugars or sweeteners: with the measuring cup for 3 min at speed 4 or until the mixture appears frothy.
Add the vanilla extract, and the egg, and continue to beat with the butterfly for 3 min at speed 4.
Now remove the butterfly and add the baking soda and the sifted flour, little by little through the hole, always with the Thermomix in motion at speed 3.

As soon as the mixture appears smooth and homogeneous, add the chocolate chips, and mix for 3 min counterclockwise at speed 2.
