Ingredients for 14 Microwave Eggplant Meatballs
- 1 eggplant (about 550 g)
- 2 eggs
- as needed extra virgin olive oil (spray)
- 9 whole wheat rusks
- 2 oz oz Grana Padano DOP cheese (grated)
- 1 clove garlic
- 1 bunch aromatic herbs (basil, chives, parsley)
- 2 pinches salt
- 1 pinch pepper
What is Needed to Prepare Microwave Eggplant Croquettes
- 1 Microwave oven
- 1 Baking tray crisp or Panacrunk
- 1 Microwave bag
- 1 Mixer
Method
Take a whole eggplant, do not remove the skin or stem, wash it under running water, and dry it. Place it inside a microwave-safe food bag, seal it, and cook at 600 W for 10 minutes. If you don’t have a microwave bag, you can cook the eggplant following the recipe for microwave eggplants.
Once the eggplant is cooked, let it cool slightly, then remove the stem and cut it into strips lengthwise.
Meanwhile, blend the rusks in a mixer along with the peeled garlic clove, the bunch of aromatic herbs, grated Grana Padano, two pinches of salt, and a pinch of pepper.
Blend the breadcrumbs until you get a very fine mixture, then transfer it into a bowl.
In the same mixer, add the eggplant pieces and blend them for a first mix.
Add the eggs to the blended eggplant and operate the mixer again.
When you have obtained a homogeneous consistency, transfer the mixture into a bowl.
Mix the mixture and start adding the aromatic breadcrumbs.
Continue adding the aromatic breadcrumbs until you finish it.
When you have added all the breadcrumbs, you will obtain a very firm and easily workable mixture. Shape many small meatballs of equal size and set aside.
Spray some oil on the crisp or panacrunk tray and arrange the meatballs on the surface. Spray more oil on the surface of the meatballs.
Cook the eggplant meatballs in the microwave on combi 1 function, or microwave+grill function, or crisp function for 8 minutes. When ready, take them out and serve them while still hot.
