From the Pan to the Jar Recommends…

For the success of the recipe, it is necessary to use soaked and peeled dry chickpeas. Chickpeas double their weight during the 24-hour soak.

You can make this recipe suitable for gluten intolerants by replacing the breadcrumbs with gluten-free breadcrumbs.

You can make this recipe vegan by replacing egg whites with the same weight of gel derived from flaxseeds, soaked for 2 hours and then filtered.

You can accompany chickpea burgers with a bed of carrots and peas and a yogurt sauce.

**The cooking times in the jar are calculated for still warm burgers. Increase the times by 2 to 4 minutes if the burgers are lukewarm or cold.

Legume Burgers in Jar Cooking

If you love vegetable burgers, try also broad bean and carrot burgers.

The night before: soak 65 grams (about 2.3 oz) of dried broad beans for 12 hours. Peel and trim 220 grams (about 8 oz) of carrots and slice them. Place them in a 500 ml jar with a pinch of salt, close the jar, and cook for 6 minutes at your tested power. At the end of cooking, let the jar rest closed.

The next day, drain the broad beans well, transfer them to a mixer and add a pinch of salt and half of the pre-cooked and drained carrots. Blend well and then put the mixture in a bowl. Add 35 ml of egg whites and 1 tablespoon of breadcrumbs. Mix well and then take the mixture with damp hands. Shape into typical burger shapes. Proceed according to the recipe.
