The pistachio brownies are the pistachio variant of the famous chocolate treats typical of Anglo-Saxon culture. Instead of dark chocolate, a pistachio spread is used, making this dessert truly irresistible. The recipe is very simple and requires very few steps. If you are lactose intolerant, you can use lactose-free butter, soy butter, or margarine.

- 2 eggs
- 0.9 cup sugar
- 1.2 cup all-purpose flour
- 1/2 cup butter (melted)
- 1 tsp baking powder
- 1 pinch salt

Pistachio Brownies Recipe

Start the preparation of the pistachio brownies by weighing the pistachio spread into a bowl and adding the sugar. Mix the two ingredients using a spatula.
Add the all-purpose flour, baking powder, and salt to the bowl and mix well until you get a sandy mixture.
Melt the butter in the microwave or on a stovetop and let it cool slightly.
Add two medium-sized eggs and the cooled melted butter to the ingredients you have worked so far. Mix with the spatula until you obtain a smooth and lump-free batter.
Transfer the batter into a pan (mine is a 20cm (8″) square) lined with parchment paper or greased with butter or a baking spray. Level with a spatula and bake in a preheated static oven at 350°F for about 25 minutes.
Let the pistachio brownies cool for at least 20 minutes before cutting them into squares with a smooth-bladed knife.

You can further enrich this already flavorful dessert with chocolate chips and nuts. To achieve a more intense green color, use a few drops of food coloring.
