  • 1 tsp extra virgin olive oil

How to Make Pumpkin Risotto in Jar Cooking

  • Slice the leek, after removing the outer part, rinse it under water and drain it very well. Distribute the sliced leek in the jar and add the butter, oil, and a pinch of salt. Place the jar (only the base without clips and lid) in the microwave and sauté for one minute at maximum power. In the meantime, cut the pumpkin slice into cubes.

  • Add the pumpkin to the sautéed leek and wilt for one minute in the microwave, still at maximum power. Then add the rice and wine, mix well and let it evaporate for another minute, always at the microwave’s maximum power. Finally, complete with the bouillon cube, pepper, and water. Mix again, clean the jar’s rim, close, and clip. At this point, for the recipe to succeed, you need to let the seasoned rice rest for 15 minutes, occasionally shaking the jar.

  • After the first rest, set the microwave to one step lower than the Tested Power(I use 400W compared to my 600W TP), insert the jar and start cooking for 5 minutes. Let the closed jar rest for 20 minutes. Once at room temperature, you can store the pumpkin risotto in jar cooking in the fridge, where it will keep for 2 days. To serve the rice, just unclasp, place the jar in the microwave, start for 2 minutes with the defrost function and then start at your power for a couple of minutes. Pull the gasket, stir, and enjoy your meal.

Be careful when purchasing to choose a Carnaroli rice that has a cooking time of 16-18 minutes.

Pumpkin and Sausage Risotto in Jar Cooking

If you love strong flavors, try adding 1.8 oz of crumbled sausage, reducing the rice amount to 2.5 oz for 1/2 cup of water.

When opening the jar, add 1.1 oz of taleggio (or gorgonzola) and stir.

Vegan Pumpkin Risotto in Jar Cooking

Replace the butter with another teaspoon of oil and, when you open the jar, add 0.2 oz of nutritional yeast flakes.
