With the chestnut and mushroom soup in jar cooking in the microwave, I inaugurate the season of jar-cooked soups. My ultimate comfort food, the one that brings me peace with the world on cold evenings. I love jar-cooked soups, like this Miso Soup in Jar, or this Beans and Escarole Soup in Jar.
Warm and tasty, this jar-cooked soup has 4 ingredients: chestnuts, mushrooms, celeriac, and borlotti beans. You just need to put everything together in the jar, along with a few other things, to get an amazing recipe. You can enjoy it as is or, as I did, blend part of it to make a chestnut and mushroom cream. I’m very undecided on which version is better, actually, I think the ideal is to enjoy part of it as a cream and the chunky part, toasted in the oven on a bed of croutons.
In the recipe, you’ll find the weight of the already cleaned chestnuts, and at the end of the article, I’ll explain how to cook chestnuts in jar cooking or in the air fryer, which for me, were a real discovery. Alternatively, in better-stocked supermarkets, pre-cooked and cleaned chestnuts can be found. I find that, for small quantities, they are a great convenience.

How to Make the Autumn Soup in Jar Cooking
Peel and cube the celeriac, distribute it in the jar, and add: the celery, carrot, and onion mix, mushrooms, beans, and coarsely crumbled chestnuts. Season with the bay leaf, pepper, and add the bouillon cube. Pour in the water and, using a spoon, mix everything well.
Set the microwave to your tested power (I use 600 watts), place the jar inside and start cooking for 14 minutes*. At the end, let the jar sit closed for 2 hours. During this time, the soup will continue to cook at a low temperature, and a vacuum will form in the jar.
Once the soup has rested, you can store it in the refrigerator, where it will keep for 15 days. When you want to serve it, just unhinge, acclimate the glass with the microwave defrost function for about 3 minutes, and then proceed at your power until opening. It will take about 6 minutes. If you prefer the cream version, take a few spoonfuls of soup, remove the bay leaf, and use the blender. Blend everything, distribute into plates (or jars), and finish with the soup part you set aside.

How to cook chestnuts in the air fryer: score the chestnuts by making a cross-cut on the back, soak them in water and let them rest for an hour. Drain the chestnuts, transfer them to the air fryer basket, and start cooking for 10 minutes at 356°F (180°C) and another 15 minutes at 392°F (200°C), stirring occasionally for even cooking.
