Basic Ingredients for a Jar of Flavored Oil in Microwave Jar Cooking

  • 4.4 oz extra virgin olive oil
  • 2 cloves garlic
  • 1 dried chili
  • 8 berries pink pepper
  • 4 lime peels (dried)
  • 4 orange peels (dried)
  • 8 fennel seeds
  • 2 cloves
  • 1 juniper berry
  • 3 leaves sage
  • 1/2 sprig rosemary
  • 1 pinch nutmeg
  • 1 leaf bay leaf (small)
  • 2 slices fresh ginger
  • 2 sprigs thyme
  • 4 mandarin peels (dried)
  • 2 pinches Sichuan pepper
  • 4 sun-dried tomatoes
  • 4 leaves basil
  • 6 capers preserved in salt
  • 1 clove garlic
  • 1 pinch dried oregano
  • 1 dried chili
  • 5 leaves sage
  • 1/2 tsp shallots (dried)
  • 5 g truffle
  • 2 pinches pepper

  • 1 Microwave oven
  • 1 Jar from 290 ml with thin gasket

How to Make Jars of Flavored Oil

  • Place the base of the jar on the scale, cut or insert the chosen aromas, totaling 6-7-8 grams, depending on the chosen aromas. Add the oil, stir, and clean the rim of the jar. Close with a lid and gasket and clip it.*

  • Set the microwave to the minimum power, I use 160 watts for a tested power of 750 watts, insert the jar and start for 6 minutes. At the end, set the microwave to 350 watts (half power) and start for 2 minutes. Remove the jar from the microwave and let it rest closed for a week.

  • Store the jars of oil in a cool and dark place, preferably in a tavern or in the refrigerator in the least cold area. The aromatic oil will keep for 3 months. Once opened, it must be stored for a month in the refrigerator.

Rosella’s Tips for Flavored Oils in Microwave Jar Cooking
