How to Make Figs in Jar Cooking
Quickly rinse the figs under water with all the skin. Drain them well and place them at the bottom of the jar, with the tip facing upwards.
Sprinkle the sugar on the figs and add the rum.
Clean the rim of the jar, close and latch. Set the microwave to the highest power, insert the jar, and start cooking for 4 minutes. Let it rest for 2 minutes in the turned-off microwave, then proceed with another minute of cooking, always at maximum power*.
At the end of the second cooking, let the closed jar rest for at least 2 hours. The figs with rum will continue cooking at low temperature. Once at room temperature, place the jar in the refrigerator.
Rosella’s Tips…
*In the second cooking step, watch the cooking and turn off as soon as the boiling is intense. This way you will avoid unnecessary splashes. The caramelized figs in jar cooking, like all fruit cooked in jars, need to be monitored during cooking.
To open the jar, pull the seal. Once opened, the figs will keep for 4/5 days in the refrigerator.
Fresh Figs in Jar Cooking Variations…
The alcoholic part of the rum will evaporate during cooking, leaving only the aroma, but if you prefer, you can omit it. In this case, I would add a touch of vanilla.

If you prefer a spreadable jam, cut the figs into small pieces, add ¼ cup of sugar, and cook at 500 watts (an intermediate power between tested and halved), for 5 minutes.
