Rice and Zucchini in Jar Cooking

The rice and zucchini in jar cooking is one of the very first experiments in microwave jar cooking, which I am proposing today in a restored version and adapted to the technique as it has evolved. Just think that my first experiment with jar cooking was zucchini in jar cooking.

Imagine that this recipe was dated back to 2015. Indeed, at the beginning of this journey, I ignored many aspects, and only by trying and trying again, changing microwaves, and consulting with my group, I was able to refine the technique and made it possible to cook many types of grains, learning the cooking times for jar cooking and also which power to use, depending on the food.

Shopping List for Making Rice with Zucchini in a Jar

  • 1 zucchini (about 5 oz)
  • 1/3 cup Basmati rice
  • 2/3 cup water
  • 4 Taggiasca olives (pitted)
  • 1 teaspoon extra virgin olive oil
  • 4 leaves basil
  • 1 pinch salt

  • 1 Jar 500 ml with thick gasket
  • 1 Small Bowl glass

How to Make Rice with Zucchini in Jar Cooking?

  • Wash, trim, and dice the zucchini. Transfer it to the small bowl, season with salt and oil, mix, and wilt it in the microwave for 2 minutes at 750 watts.

  • Distribute the wilted zucchini in the jar, add the rice, olives, basil, and water. Stir well with a teaspoon, then clean the rim of the jar, close it, and clamp it.

  • Set the microwave to 500 watts (a medium power between tested and halved), insert the jar of rice, and cook for 6 minutes. After 5 minutes, gently shake the closed jar on the surface to stir the rice and detach it from the bottom. Once cooking is complete, let the closed jar rest for 20 minutes.

  • Once it has rested, you can unclamp and open the jar in the microwave, as per instructions.

Extra Tips for Cooking Rice in a Jar

You can also use brown Basmati rice for this recipe, with a cooking time of 20 minutes. In this case, cook for 8 minutes and you can store it for a couple of days in the refrigerator. The one you see in the picture is brown rice, stored for 3 days.

Curry Rice and Zucchini in Jar Cooking

For an ethnic touch, you can add half a teaspoon of English curry to the rice.

Rice with Vegetables in Jar Cooking

You can replace the zucchini with an equal weight of mixed vegetables, for example, peppers, eggplants, and zucchinis, making sure to wilt them first in the microwave. If you have leftover grilled vegetables, they will be great for this recipe.
